Pecan Pancakes with a Burst of Blueberry

Most people I know are fans of pancakes.  Would this include you?

My good friend Nancy Henrich,  founder of  Healthy Diabetes Coach shared this recipe which just sound wonderful.  I think next Sunday’s breakfast has been found!

Pecan Pancakes with a Burst of Blueberry

Directions:

BLEND in a blender:

  • ½ to 1/3 cups of pecans (handful)
  • 3 ½ cups quick oats
  • 4 cups water
  • 2 teaspoon vanilla
  • 1 teaspoon salt
  • 2 Tablespoons agave nectar
  • POUR into large bowl.

ADD:

  • 1 ½ cups of blueberries.

Cook:

  • on nonstick griddle or skillet.

SERVE:

  • with nonfat vanilla Greek yogurt, agave nectar and a sprinkle of cinnamon.
