Grilled Cheddar & Hummus Whole grain Sandwich

This treat from a frind of mine I met at a local networking event sounded to good to not share.

Grilled Cheddar & Hummus Whole grain Sandwich w/ sweet potato fries and house salad (2) ppl

  • (4) slices of whole grain bread
  • (4) slices of cheddar cheese
  • (1/2 cup of store bought hummus)
  • 2 pieces of iceberg lettuce
  • 2 slice tomato
  • Couple slices of onions
  • 2 cups of store made sweet potato fries
  • 2 cups spring mix
  • ¼ cup diced tomatoes
  • 1 tablespoon assorted bell peppers
  • 1 tablespoon green slice olives
  • ¼ cup of shredded carrots
  • ½ cup slice cucumber

 

  1. Preheat oven 400 degrees. Spray sheet pan with pan spray put sweet potato fries. Bake 15 until golden brown
  2. Take (4) slices of bread spread hummus on all slices. Then (1) slice of cheese per each slice. Add iceberg, tomato and onion and close sandwich
  3. Mix spring mix with all vegetables in mixing bowl
  4. Use Oil & Vinegar or dressing of choice
  5. Total preparation time 30-35 minutes
