Summer Rainbow Salad

When the weather is hot often times a nice easy and nutritious salad fits the bill.

Here is a great recipe from my associate Nancy Heinrich, the Healthy Diabetes Coach

Summer Rainbow Salad

INGREDIENTS:

  • 6 cups chopped greens (romaine, Bibb, and other dark greens)
  • 2 cups sliced red cabbage
  • 2 Granny Smith apples, diced
  • 1 large pear, diced
  • ¾ cup walnut halves, toasted
  • 1 Haas avocado, diced
  • 2 chopped shallots
  • ¼ cup red wine vinegar
  • 2 teaspoons honey or agave nectar
  • ¼ cup extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup feta cheese

 

DIRECTIONS:

  • In a large bowl, toss romaine, cabbage, apples, pear, and walnuts
  •  In a small bowl, whisk shallots, vinegar, honey, oil, salt and pepper. Pour over salad and toss
  • Sprinkle with feta cheese
