Black Bean Burger

In the quest to provide healthy meal alternative I continuously turn to Nancy Heinrich from The Healthy Diabetes Coach and Growing Healthy Kids.

She came through again with this Black Bean Burger Recipe.  Give it a try and let me know how you liked it.



  • 1/2 medium yellow onion, finely chopped
  • 2 (15-ounce) cans black beans, rinsed and drained, divided
  • 4 Tablespoons freshly chopped cilantro leaves
  • 1 Tablespoon smoked paprika
  • 1/2 cup corn meal
  • fresh ground black pepper

After forming burgers:

  • 1 cup Panko bread crumbs mixed with 1 Tablespoon smoked paprika


  •  8 whole grain buns
  • 1 tomato, sliced
  • Romaine lettuce leaves, or any other type you have on hand
  • Chipotle mayo
  • Avocado
  • Sharp cheddar cheese


  • Heat a grill or grill pan over medium-low heat.
  • Place black beans in a large mixing bowl and mash with a large fork. Add onion,
  • cilantro, parsley, smoked paprika, corn meal, and pepper. Mix well.
  • Divide remaining mixture into 8 portions, roll into balls, then flatten into patties. Place
  • burgers into a shallow bowl with the Panko mixture and and flip so both sides are
  • coated. Pat burgers lightly.
  • Place burgers on hot lightly oiled grill over medium-low heat and cook about 6 minutes
  • per side or until heated through. Toast hamburger buns on a grill. Place a burger on the
  • bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the
  • top of the bun and serve.
