Butternut Squash and Apple Soup

This is just too easy, so easy in fact that you can’t imagine it being good.

Here are the directions:

  • 1 large butternut squash,  peeled, cleaned and cubed into 1″ or so sized chunks
  • 4 or 5 apples,  peeled, cleaned and cubed into 1″ or so sized chunks.  Any kind of apples will do. If you like sour or sweet or, well, you get the drift.
  • 2 tbs nutmeg
  • 2 tbs cinnamon
  • 1 box of veggie broth
  • water

Cooking

  • place all the items in a pot large enough to cover the squash and apples with the liquid, including the broth and water.
  • cook on medium heat at a low boil until the squash is soft enough to mash

Finishing

you can leave the soup “chunky” from mashing or put though a food processor to make it smooth.  I prefer it chunky
